Yesterday was a pretty chill day. There was a heat advisory here and Sawyer and I were both really tired, so we chose to stay home. I watched the live stream of church on TV while he napped, and then we enjoyed a quiet day indoors.
For lunch yesterday, we made one of our favorites- biscuit pizzas! This is one meal Sawyer asks for a lot, and I’m happy to make it because its a) cheap, b) fast, and c) delicious.
When we lived in Missouri, Sawyer found a love for cooking through his after school program, and since then I like to ask him to help me cook sometimes. Since he loves biscuit pizzas so much, I almost always let him help me prep when we make them. He loves getting to put the shredded cheese and pepperonis on top of the biscuits. Sometimes I let him spoon the tomato sauce on top too, but I always put them in and take them out of the oven; that’s not something I’m ready to let him do just yet. LOL
After lunch, Sawyer confided in me that he wants to learn to cook more things. He especially wants to learn how to bake, so he can make cakes and cookies, and he said he wanted to learn how to make pudding and Jell-O. I told him that next time I go shopping, I’ll be sure to get some things we can make together and he can start learning to do more in the kitchen. I love that he’s found a love for cooking; his big sister Emily also loves to cook, and she’s very good at it. I told Sawyer that maybe if he likes it enough, he could go to culinary school after he graduates and end up being a chef one day. He said “Maybe… but I kinda just want to cook for fun”. I told him that was ok, too. 😉
Here’s our recipe for biscuit pizzas!
1 can of jumbo buttermilk biscuits (we use these from Walmart!)
1 8 oz. can of tomato sauce
Shredded cheese (we typically use Great Value’s “Fiesta Blend”)
1 package of pepperoni (we use a LOT of pepperoni in our house, so I buy this package from Walmart)
Preheat the oven according to the instructions on your biscuit can.
Lightly grease a cookie sheet or pizza pan with oil and place your biscuits about 2 inches apart. Flatten the biscuits.
Spread a tablespoon of tomato sauce onto each biscuit.
Cover each biscuit with shredded cheese and 2-3 pieces of pepperoni.
Cook in the oven for 15 minutes.
